SNAP Challenge Day 2–Christi

Today was a bit easier. I had cereal for breakfast again, but made enough to have a bit of leftover for a snack in mid-afternoon. I took the remainder of my stir fry from Monday’s supper and ate it for lunch today and will finish the rest of it tomorrow. I wasn’t as hungry tonight when I arrived home as I was Day 1 of the challenge. My husband didn’t join the challenge with me, so mealtime has been a tad bit weird. Mealtime is usually an enjoyable time. However, these past two days have been rough. The disparity in meals–he’s eating grilled chicken, mashed potatoes, peas and salad versus my lettuce salad, macaroni and marinara sauce–makes me think about the limited choices many individuals have around food. Having access to healthy, affordable food should be a human right, not a privilege.
